Wild Florida

Stone Crab

Joe & Jennie Weiss were the first to serve Florida Stone Crab ( Menippe mercenaria ) at their eponymous Miami Beach restaurant.  Today, crabbers harvest Stone Crab, one claw at a time, and throw them back to sea.  Enjoy it in its most classic presentation: served 'crack crack cracked' over ice with mustard sauce.

California Spiny Lobsters are caught daily by our fishermen partners one at a time, using a selective trap method, along rocky reefs and among kelp forests near the ocean floor from Dana Point to Catalina Island.

Dungeness Crab

Dungeness Crab ( Metacarcinus magister ) is named for the small fishing village of Dungeness, Washington, on the Puget Sound. The namesake Crab has been commercially harvested in Washington since 1848 - the oldest known shellfish fishery of the Pacific Northwest.

Bluefin Tuna

Southern California waters remain uncommonly warm this autumn due to 'El Niño'.  Rather than making their regular migration south, Bluefin Tuna remain local.  This late-season Tuna was line-caught off the coast of Catalina Island.
